Coconut Lime Cupcakes
- 1 1/4 cups of All-purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 eggs
- 3/4 cups Sugar
- 1/2 cup Oil
- 2 to 3 tsp Lime Zest
- 4 tbsp Lime Juice
- 3/4 cup Coconut Milk

- 1 cup Cream Cheese (or 250 ml)
- 1/2 cup Butter (Softened) - 8 tbsp
- 1 1/2 cups Powdered Sugar
- 4 to 6 tbsp Dessicated Coconut
- 1 to 2 tbsp Lime Juice
Method:
Coconut Lime Cupcakes
- Preheat the oven at 180 degrees Celsius (Fan Forced).
- Combine the flour, baking powder, baking soda and salt in a bowl.
- In a separate bowl, whisk the eggs and sugar. Then add the oil, lime zest, lime juice and coconut milk.
- Mix the dry ingredients into the wet ingredients until just combined. Do not over mix.
- Line a cupcake pan with cupcake paper cups and fill each one 2/3 full.
- Bake at 180 degrees Celsius for 15 minutes or until the cake springs back when lightly touched (or skewer comes out clean)
- Allow cupcakes to cool completely before adding frosting.
Coconut Frosting:
- Beat the cream cheese with hand mixer until creamy.
- Add the butter 1 tbsp at a time and beat thoroughly after each addition. Add the dessicated coconut and powdered sugar all at once and mix until just combined. Do not over beat.
- Scoop frosting into a piping bag and pipe frosting on top of the cooled cupcakes.
- Garnish with a wedge of lime and sprinkle dessicated coconut on top.
